Diamond Shell Clam
Sourced form Cloudy Bay Clams, New Zealand
Cloudy Bay Clams are pioneers in the industry of harvesting surf clams along the coast of New Zealand.
Cloudy Bay Clam’s have developed a non-invasive hydraulic “clam rake” harvester. The rake is towed along the seabed liquefying the sand and scooping underneath the clams, separating them without sea-bed compression or damage to the mollusc.
The clams are gathered into an open mesh cage for processing, reducing the gathering of non target species. The clams are kept immersed in water and protected from the elements. This technique also minimises damage to the surf zone, which is extremely robust to disturbance.
Cloudy Bay has successfully undergone both fishery and chain of custody audit and its surf clams can now carry Friend of the Sea international sustainability seal of approval. Friend of the Sea certification confirms their efforts and continuous commitment to sustainability.
The Diamond Shell clam is characterised by its sweet, fresh sea spray aroma and clean ‘wild ocean’ flavour. When cooked, the clam exhibits a fresh fragrant scent of seaweed with a rich, buttery flavour with a light nutty aftertaste.
