Argyosomus hololepidotus[two_third]Mulloway (also called Jew fish and Butter fish) is a delicious firm fleshed oceanic predator that can reach sizes of up to 2m. They are found throughout coastal and estuarine waters in the southern half of Australia. In the rugged fertile estuarine region of the Coorong, where the river Murray reaches the turbulent southern ocean, there are smaller school Mulloway that are around 2-4kg.
The shallow salty water of the Coorong was cut off from the ocean thousands of years ago, and it has created a unique habitat for the fish. With Mulloway, the taste is said to get better the bigger the fish, however, for every rule there has to be an exception. The smaller Coorong School Mulloway have a particular sweetness to the flesh often not found in smaller oceanic Mulloway. This sweetness is largely due to their time spent in the shallow salty conditions of the Coorong where the fish come to feed and breed.
The community fishery has been in operation for 154 years and is based in this large body of fresh and salty water within a National park of international importance. The region is ranked as a RAMSAR wetland and is a vital breeding and feeding ground for many thousands of migratory wading birds. The Lakes and Coorong fishery in South Australia has full environmental certification from the Marine Stewardship Council (MSC) for sustainability, which they achieved with the help of the World Wildlife Fund (WWF).
The families involved in the fishery then developed and released â€œWild Fisheries with a Futureâ€ an Environmental Management Plan which was a world first for any fishery.[/two_third] [one_third last]TOM SAYS:
The sustainable Mulloway is a great fish to use for a menu, as it is a thick fillet with skin on that people always enjoy. It works well pan roasted. One of my favourite recipes is to crust the fillet in chopped thyme before browning it in a pan and then roasting the Mulloway in the oven. The fish takes on a delicious herbaceous perfume from the thyme. When roasted, it is served with a warm shallot vinaigrette with roast tomatoes and mixed herb salad. Delicious.[/one_third]
