MSC-certified Portugal Sea Bass Caused Big Splash at Fish & Co.
Through the excellent relationship we have with our wonderful fishmonger, Joto, we were able to recently put some air-freighted MSC-certified Sea Bass on our specials menu.
Imagine my delight when I walked into the coolroom to see a completely new species of fish for me to experiment and play with.Â The beautiful fillets arrived just in time for the busy weekend.Â Having never sampled the fish before, I immediately cooked a fillet using just a splash of extra virgin olive oil to gain a sense of the fish’s flavour.Â The beautiful and delicate flavour of the Sea Bass means that in formulating the dish I must keep in mind not to overpower it and let the flavour of the fish speaks for itself.
After a little planning and rummaging through the larder, I decided the best course of action is to simply pan fried the fillets.Â I whipped up a lemon, leek, tomato and white wine sauce just to accent the fish.Â To carry on the Mediterranean theme, a grilled fig, walnut, rocket and goats cheese salad was served on the side.
Based on the feedback of those who sampled the dish including some of our favourite regular customers, it appeared to be a winning combination and we were sold out by Saturday lunch.
Luckily though, we were able to source a limited amount of additional fillets.Â So for those of you that have made a booking for Valentines Day, I will be doing an encore of this dish.Â If you have other romantic plans and can’t make it to the restaurant, I will endeavour to let you know when our next supply will be arriving.
