Wild caught Alaskan Sockeye Salmon $59 per kg
The Alaskan and Canadian Salmon fisheries are some of the best managed and most sustainable in the world. Pacific Salmon spawn only once and then they die. 50% of the wild salmon stock is allowed to run the great rivers of this region to spawn. So from the outset a smaller percentage of wild salmon is targeted for catch each year with a guarantee of stock for the years to come. There are very few fisheries around the world that can say that they are underfishing a species by 50%.
We purchase whole fish that are frozen at sea, pre rigor mortis, which traps all the goodness in the fish. This means that as well as being fished in a sustainable manner in the first place the fish has a lower carbon footprint in transit as well. The bulk order of wild fish can be shipped rather than air freighted.
Norwegian Cod $39 per kg MSC certified
Coorong Yellow Eye $38 per kg MSC certified
Delicious small fillets of fish with the skin on. There is a high Omega 3 content in the skin. Quick and simple to cook, this fish can be grilled or fried.
Hake $34 per kg MSC certified
Skinless fillet of fish. White firm fleshed fish, easy to cook. It can be grilled, fried, baked, steamed or diced for soup, stew or curry.
Albacore Tuna $42 per kg
This is a great sustainable alternative to the larger Yellow Fin and Blue Fin Tuna. Great served rare as carpaccio or cured with salt or citrus. Can also be fried or grilled.
Coorong Mulloway $45 per kg MSC certified
Delicious firm, sweet flesh. It is a thick fillet with skin on which is ideal for pan roasting.
Banana Prawns $39 per kg MSC certified
New Zealand Ling $38 per kg MSC certified They are a lovely tasting fish that can be used for a variety of strong flavoured cuisines and are well suited to grilling, frying, barbecuing and baking. The Ling fillet works brilliantly in an aromatic Asian curry or a fish stew as it will stay firm and bright white and hold its shape well.
